Apple Turkey Chili

Our fresh take on chili took second place in the 2013 Lenox Apple Squeeze Chili Contest.

  • 1/2 cup Onions (diced)
  • 1/2 cup Red Peppers (diced)
  • 2 clvs Garlic (minced)
  • 3 lbs. Ground Turkey
  • 1/4 cup Salad Oil
  • 1/4 cup Green Chilies
  • 1 cup Tomatoes (diced)
  • 1/4 lb. White Navy Beans (soaked in water overnight)
  • 1 cup Granny Smith Apples (diced)
  • 1 cup Chicken Stock
  • 2 Tbsp. Chili Powder
  • 1 Tbsp. Curry Powder
  • 1 Tbsp. Cumin
  • Salt & Pepper to Taste

Drain white beans and cover with water and cook until beans are soft. Then set aside. In a pan,
heat salad oil and add ground turkey and cook until browned. Remove from pan, add onions,
peppers and garlic and cook 3 minutes. Add tomatoes, green chilies, chicken stock and spices
and let simmer until liquid is reduced by half. Remove from stove, add cooked beans and apples.
