Baby Spinach Salad

  • ½ cup buttermilk
  • Juice of 1 lemon
  • 1 tsp olive oil
  • 1 tbsp minced shallots
  • 2 tsp fresh dill (chopped)
  • 2 tsp fresh parsley (chopped)
  • salt & pepper to taste
  • 1 lb baby spinach
  • 2 mandarin oranges, segmented
  • 2 oz blue cheese crumbles

In a bowl, whisk together the buttermilk, lemon juice and olive oil. Add the shallots, dill, parsley, salt and pepper and whisk.

Please spinach in a large salad bowl. Toss with enough dressing to cover greens. Place salad on platter. Top with orange segments and blue cheese.
