Celery Root and Pear Bisque

Makes 6 - 8 cups

  • 1 Spanish onion, diced
  • 1 large celery root, cut into cubes
  • 3 pears, cored and diced
  • 2 Yukon Gold potatoes, peeled and diced
  • 1/4 cup olive oil
  • 1/2 bunch of fresh thyme, chopped
  • 2 qts. chicken or vegetable stock
  • salt & pepper to taste

Heat olive oil in a large stock pot. Add onions and cook until soft. Add celery root, potatoes,
pears and thyme. Cover with stock and bring to a boil.

Turn heat down and simmer until the potatoes and celery root are soft.

Remove from heat and let cool. Place in a blender and blend until smooth. Season with salt and
