Curried Chicken Salad

  • 2 lbs boneless skinless chicken breast
  • 2 tbsp  canola oil
  • 2 tbsp  curry powder
  • 1 tsp  salt
  • 1 tsp  cayenne pepper
  • 1 cup  diced red onion
  • 2 tbsp  minced garlic
  • 2 cups  cored and diced Granny Smith apple
  • Juice of 2 limes
  • 2 cups  non-fat mayo
  • ½ cup  low-fat sour cream
  • 2 cups  raisins
  • Whole wheat pita bread

Cook chicken breast one day ahead of preparing salad and refrigerate. Cut chicken breast into medium-sized diced pieces.

In a mixing bowl, combine oil, curry powder, salt, cayenne, garlic, lime juice, mayo, and sour cream and mix well.

Add remaining ingredients and mix well.

Serve on platter of baby greens with halved whole wheat pita.
