Sweet Red Pepper Sauce

Makes 8 4-oz. servings

  • 3 tsp. Olive Oil
  • 4 each Red peppers, seeded and chopped
  • 1 cup Carrots, sliced
  • 1 cup Tomatoes, diced
  • ½ cup Tomato Puree
  • 1 tsp. Garlic
  • ¼ tsp. Pepper
  • ½ cup Pears
  • ½ tsp. Basil

Heat oil in a large skillet. Sauté pepper and carrots until soft.

Add tomatoes, tomato puree, garlic, pepper, pears and basil. Simmer for 30 min. or until
vegetables are soft.

Put in blender and puree until smooth.

Serve over pasta or grilled boneless chicken breast
